Chicken and Dumplings!

Yall are not going to believe it, but until today I have never made Chicken and Dumplings!!! That's right, I am probably not a real American or something, but to tell you the truth, I never could stand that doughy stuff in there with the Chicken. Everyone else in the family loves them, so today I said I would stop the Dumpling Boycott and give it a try, and guess what happened!!??? They ate them all! I didn't eat them, although I thought they were delicious except for the doughy stuff!!

I have this thing right now of trying to make some one dish meals. A fellow officer at work was telling me about something called Shrimp Boil, have yall ever heard of that? He was telling me he would bring me a recipe to make it, so it will be my next new thing to try on my family.
I am just bored with making the same old traditional things. I love to cook but at this time of the season I don't have alot of time, but I got three males to feed at home and they come in the door famished!!! Somebody help me!!!!

You get thinly-cut chicken breasts, dip each strip in mixture of 3/4 c. parmesian cheese and two eggs w/ a couple of tbsp. of milk. (That's it!) You fry it in butter and olive oil (mostly butter). It's not lite, but it's delicious. The outside of the chicken comes out eggy and yummy. I serve it with white rice and a salad on the side.

If you use the biscuit type of dumplings, bake them first and they will not have the gooey insides. They'll just be juicy and tasty.

You can do the same with the flat kind to, I guess, though I never have.

Did we used to be married?? I love chicken and dumpling!! AND I've learned to just make my own. ;-)

I just may fix some for lunch. I enjoy cooking ..... check out Rachael Rays 30 minute meals. She even did a 60 minute Thanksgiving. You should records some of those shows.

Dana, I love the new Betty Crocker meals in a box. There are several kinds – chicken and dumplings is one of them. They are actually very good and so quick! I’ve also gotten in the habit of baking a bunch of boneless chicken breasts every weekend and freezing them to use throughout the week in soup, casseroles, etc. Since it’s winter, I’m using my slow cooker a lot, too. Chili, vegetable stew……yum!

Dana, you will have this quandry until the guys learn to cook themselves, which they will if they get hungry enough. But then, you are hearing this from someone who only cooks twice a week, making a main-dish meal that has 3 days of left-overs...

Do you have a crock pot? It's the best for one-dish meals. Throw in a chuck roast (cheap), some potatoes & carrots, a cup of water, and a package of dry onion soup then cook on low all day or high 1/2 day. Yum! One of my favorites. Also, potatoes and pork chops with cream of mushroom soup cook up nicely in the old crock pot.

Joe! Those aren't dumplings, they're bisquits :-)

Dana, the dumplings shouldn't be gooey. They should be fluffy!

1 cup Flour
1/2 teaspoon salt
1 1/2 teaspoon Baking Powder
1 large or 2 small eggs
1/4 cup (cold) water

Mix all ingredients except water. Add water slowly until gluey. (always use cold water, when you have to add it to flour)

Drop in simmering soup by heaped teaspoons(a teaspoon like you'd use to stir coffee)

Cover the pot for a half hour(DO
NOT TAKE THE LID OFF DURING THAT TIME) or they'll come out gooey :-)

So make sure your simmer is low and even.

I make a Chicken and Rice Casserole that my family loves, and I just recently had a broccoli and cheese casserole that was to die for.
